Dive into the heart of Italian culinary tradition with Chef and Owner of Scratch Pasta, Stephanie Fees. This hands-on experience is designed to introduce both beginners and seasoned food enthusiasts to the art of making perfect pasta and raviolis from scratch. You'll start by learning the secrets to preparing the ideal dough and hand-made gourmet fillings. Then, you'll transform your dough into delicate sheets ready to be filled with your choice of fillings.
You’ll bring home as many raviolis as you can make in class to share your new-found culinary talents with friends and family. You’ll also take home a tub of marinara sauce, and recipes for the pasta dough and sauce. During class enjoy a ravioli snack prepared by Stephanie and a glass of wine (if older than 21) or a non-alcoholic soda or seltzer.

Join The Flour District’s seasoned cake baker, Kayla, to learn how to make this stunning and simple berries and cream layer cake. First, she’ll instruct you how to properly mix your cake batter, fill the pans, and bake off your cakes. Then learn to evenly split cake layers, add flavorful soaking syrups, whip a cream filling, and finish assembling the cakes.
Each participant will take home their cakes decorated in class, plus their extra cake baked in class to decorate for their next special occasion! Participants (if older than 21) will also receive a glass of wine, beer, or seltzer.

Discover what makes Southern Italian cooking special in this second part of our Italian Cooking series. In this class we’ll cover 3 regional dishes: Eggplant Caponata Crostini, Shrimp & Calabrian Chili Pasta with Cherry Tomatoes, White Wine & Lemon, and Sicilian Fennel, Orange & Olive Salad. We’ll cover the techniques used to coax the flavor out of overlooked ingredients like eggplant and make seemingly unexpected ingredient pairings of fennel and oranges. Plus learn how to roll, cut, and cook fresh pasta in a simple, yet tasty, dish.
Participants will work in teams to create their dishes. Each participant will enjoy dining on their creations at the end of class, receive the recipes and a glass of wine or beer (if older than 21) or a fizzy water.

"Galette" sounds like a fancy word, but it's really just an easy-going free-form pie! Come learn how to craft Spring galettes in this hands-on class that may later find their way to your Easter or Mother’s Day brunch celebration table. Our head baker Kayla, will teach you how to make the dough, roll it out, fill, and bake your galettes in class. Choose from seasonal fruits (like berries) or savory combos (like veggies, cheese, & herbs.) Can’t decide sweet or savory? Make one of each!

Mother’s Day (Sunday May 10) is one of the top brunch days of the year, so The Flour District wants you to be prepared! Join Chef Marisa Jones in learning how to master brunch essentials and prepare a banging brunch with confidence! From Eggs Benedict to Stuffed French Toast to Biscuits and Gravy, learn the techniques that have made these dishes classics that you’ll serve all year long!
We’ll make 3 dishes in class, each with a variety of components and techniques. Teams of 4 will work together to create their recipe and at the end of class we’ll all talk about our creations and learnings and have a brunch spread to enjoy complete with mimosas (if older than 21) or OJ. Join us in The Flower District’s Atrium for "Table in Bloom - Spring Villa” hosted by local creative director and former floral and event designer at the Inn at Little Washington, Jon-Logan Jones. This workshop treats the dining surface as a living landscape inspired by the emerging beauty of spring as it meets an Italian villa. Jon-Logan will bridge the worlds of food and light and florals and break the rules. He’ll show you how to mess up the perfect table setting and infuse your work with a little bit of wild magic. We’ll begin with a live styling demonstration on layering color and texture, then learn the philosophy of using "interrupters", such as produce on the vine or fractured plating, to join floral concepts and edible dishes.
You will then work at your stations for a hands-on styling exercise by choosing an anchor vessel and styling it with wood, terracotta, mixed metals, and airy linens. You will also create your own “La Dolce Vita” trio of blooming pots in a wooden "meadow box" to take home.

If you’ve made classic risotto before, here is a chance to mix up your favorite recipe! If you’ve never given it a try, this is your opportunity to learn risotto basics, plus how to jazz up any standard risotto recipe using different grains. The beauty of the “risotto technique” is that it is a blank slate to convey any flavor that you like while incorporating healthy grains into your meal!
In this class you’ll learn how to make risottos using 3 different grains and compose your dish by adding finishing touches like Swiss Chard & Parmesan or Porcini Mushrooms, Crispy Shallots, & Pecorino or Pancetta & Shrimp with Peas.
Participants will work with a partner to craft their risotto recipes from start to finish, and enjoy dining on all 3 versions of the dishes in class, take home the recipes, and also receive a glass of wine or beer (if older than 21) or a fizzy water.

Join Aaron and Emma, pizza maestros and founders of Slice Versa, their mobile wood-fired pizza oven, for an evening of pizza making and cooking in the professional pizza rig! Aaron will demonstrate how to make proper pizza sauce and also all of the ins and outs of pizza dough (yeast, flour, proofing, oh my!). Participants will stretch and form their own pizzas using authentic techniques including the “Neapolitan slap”! You’ll top the pizzas, and Emma will show you how to cook in the mobile pizza oven, then enjoy some pizza as we wrap up class.

Stop staring at that half-empty jar of store-bought spears in the fridge and start crafting your own! Join pickling expert and local business owner Sam Addison from Sam's Pickle House for a hands-on Pickling 101 workshop where you’ll learn the advantages, science, and soul of the "cold pack" method. No boiling water baths, no intimidating pressure cookers—just fresh veggies, punchy brines, and a choose your own spice combo adventure for pickles perfect on a sandwich, charcuterie board, or to share with friends!
Each participant will customize and take home (2) 16oz jars of pickles. You'll choose from a variety of seasonal veggies like crisp cucumbers, rainbow carrots, snap peas, red onions, or spicy peppers. You'll make your brine and learn the ratios for classic vinegar bases, then create a sweet, salty, or puckeringly sour finish. And don't forget to spice it up with fresh dill, mustard seeds, peppercorns, garlic cloves, or dried chilis to build your signature flavor profile.

We’ll explore the secrets to making perfectly crusty Paella (pie-a-yah) with traditional ingredients like bomba rice, Spanish chorizo, and chicken. We’ll also prepare Gambas al Ajillo (shrimp bathed in a garlicky olive oil sauce) and soak up all the juice with Pan con Tomate (bread with tomato).

New to sourdough bread baking or want to learn? Let Brian Ray from Slowpoke Sourdough Bakehouse show you more! Teams of 2 will mix up a batch of dough then learn to create, maintain, shape, and bake with a sourdough starter made with regionally sourced and locally milled flour. In this combo hands-on, instructional and demo workshop, each attendee will take home a bread-proofing basket, dough scraper, tea towel, sourdough starter, expert knowledge & techniques, and dough made in class to bake off your own country sourdough loaf at home and many more future loaves. Enjoy a light, seasonal, and gourmet lunch and sample fresh bread!

Pâte à Choux (say: pat-a-shoe) is the delicious and delicate pastry that is the base for cream puffs, eclairs, savory gougeres and fancy profiteroles —to name a few! Curious how to make them all? Then join professional pastry chef, Emma Luster, in this choux class to learn the basics. Attendees will mix their choux dough, learn how to pipe proper cream puff and eclair shapes, and bake off the dough. You’ll learn how to make crème diplomat then fill and decorate your pastries.

So now that you’ve kept your sourdough starter alive and mastered your bread making skills, time to put that discard to use! Join Brian Ray from Slowpoke Sourdough in learning how to turn this trash into delicious treasure!
Participants will learn how to properly store discard and when discard is safe to use vs. when it should be tossed. We'll also tackle preparing Sourdough Discard Pancakes and discuss pancake making techniques from start to finish. To wrap up, everybody goes home with some starter (just in case your own starter has seen better days) and a list of recommended recipes and best practices for discard. Even though crêpes are just skinny pancakes, they get a reputation for being fancy and finicky. Well, we are here to change that notion! Join professionals Emma and Aaron to learn how to make basic crêpe batter, cook them off, then fill them with a “choose your own adventure” of sweet or savory fillings! Stuff them with berries, sweetened cream, Nutella, ham, herbs, veggies, or cheese!
